How to mark a product variant as out of stock locally.

The easiest way to locally put a variant out of stock by modifying the inventory_management column for the variant to say shopify. Make sure the inventory_policy is set to deny and the inventory_quantity is less or equal to 0.

When you change it back, it's important that the value is NULL and not EMPTY.

Why put shopify you might ask. Well, it could be anything, but that's what Shopify put when we enable inventory management on the Shopify side of things.
